Argentina Night!

So, as many of you know, Jeff and I are going to South America at the end of the summer. We are going with one of his classes at school as part of their final project. I am pleased to say that I will have no homework to do during the trip. :)

As many of you also know, I enjoy cooking, and Jeff enjoys dates where we can have a good time for small sums of money. So, we combined all this, and had “Argentina Night” last Friday.

On a whim, we cooked a meal that turned out to be one of the best we have done in a while. It was coconut rice, black beans w/ bacon, and fried plantains. We also cooked some steak with a chimichuri sauce. I think I wanted to make this only be cause saying “chimichuri” is just so much fun. Chimichuri.

Jeff was in charge of the mojitos… and Madonna was in charge of singing “Don’t cry for me, Argentina” as we capped the night off with a private (aka: at home) viewing of Evita.
